On Thursday, April 25th, we enjoyed "On the Wine’s Edge", a pairing of seafood dishes and Uruguayan wines. With an excellent turnout, the event was held at what we consider the best seafood restaurant in Montevideo: Es Mercat.
Led by Chef Facundo Connio, the dishes of Es Mercat have been praised by gastronomic journalists ranging from National Geographic to The Vacation Rental Show.
We experienced an impressive 6-course gastronomic experience, carefully paired with a selection of Uruguayan wines and led by the Best Sommelier of Uruguay 2022, Liber Pisciottano.
Each of the wines chosen come from Uruguayan wineries from different regions of the country, some of which Wine Explorers have not yet had the chance to visit and which we will could explore through this dining experience.
The menu we enjoyed was:
1st Course
Fresh fish sashimi marinated in albariño wine and herbed oil
Wine: Folklore white from Bodega Cerro Chapeu (Rivera)
2nd Course
Prawn tartare with egg yolk and ponzu sauce
Wine: Sauvignon Gris from Bodega Bresesti (Montevideo)
3rd Course
Small squid with onions and a squid ink sauce
Wine: Albariño from Bodega Compañía Uruguaya de Vino de Mar (Maldonado)
4th Course
Black hake accompanied by crushed potatoes and a red pepper vinaigrette
Wine: Tannat 398 from Bodega Casa Tannat (Artigas)
5th Course
Lemon and celery ice cream, aguachile, aperol, and faux champagne caviar
Wine: Innova Natural Sparkling from Bodega Pisano (Canelones)
6th Course
Cheese mousse with figs preserved in syrup
Wine: Innova Natural Sparkling from Bodega Pisano (Canelones)
